Total Time: Less than 40 minutes
Yield: 11 3oz cookies
Ingredients:
½ cup vegan butter
½ cup brown sugar
¼ cup white sugar
1 teaspoon vanilla
3 tablespoons aquafaba (liquid from a can of black beans or garbanzo beans)
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
1 ¼ cups flour
1 cup vegan chocolate chips
Sea salt for sprinkling - I used roughly 1 tablespoon of sea salt flakes
Recipe:
Preheat oven to 350 degrees
Cut butter into chunks and beat with sugars, vanilla, and aquafaba till fluffy - about two minutes
Whisk together flour, baking soda, baking powder, salt, chocolate chips and add to mixer
Beat ingredients till fully mixed
Line cookie sheet with parchment paper, shape dough into pucks (I made 11 3oz cookies), and place in oven
Bake for 8 minutes, remove and sprinkle remaining salt onto tops of cookies, rotate tray, bake for an additional 8 minutes
Remove, let cool, enjoy!
